People won’t shut up about how amazing sardines are for health. Unfortunately, they smell foul and seem to inspire disgust bordering on rage when those who
are averse have their olfactory experience marred by these little, oily fish. Here’s a pretty simple recipe that makes them more than tolerable.
1 can of bone-in sardines with the skin on,
3 tablespoons of Paleo friendly mayo,
2 tablespoons of Dijon Mustard (the more mustard you add, the more the sardine taste is hidden),
2 green onions, chopped
½ tsp lemon juice,
½ tsp salt,
½ tsp pepper,
½ tsp turmeric
Drain the sardines, put them into a mixing bowl and mash them with a fork.
Add the rest of the ingredients and mix thoroughly.
I’m not big on measuring when I make food, and I tend to add a lot of mayo, so I may end up with more like 4 or 5 (or 6?) tablespoons before I’m done. When I’m in a hurry or just don’t feel like getting all the ingredients out, I’ve made this
Serve over greens with some olive oil and balsamic dressing. Depending on your goals, you can add a tablespoon of collagen to this without affecting the taste at all, while sneaking in some bonus protein. Walnuts and/or raisins can also add a lot to this recipe.
You can also scale this up with a few cans of sardines and keep it in the fridge for two or three days to add a side to whatever you are eating.
